Bushwacker Tiramisu

Ingredients:

  • 1 cup of espresso coffee (cold)

  • 1/4 cup and 2 Tbs Bushwacker Spirit

  • 1 cup of heavy cream

  • Tsp of Vanilla

  • 1/2 cup of powdered sugar

  • 8 oz mascarpone cheese 

  • 1 package (12) lady fingers - Vicenzovo or your favorite brand

  • cacao powder or cocoa (sprinkle as you like)

    *Makes 6-8 individual servings.

Instructions:

  • In bowl 1 combine the coffee and 1/4 cup of bushwacker spirit (set aside).

  • In bowl 2 add the heavy cream and powdered sugar and whip with either an eclectic mixer or whisk by hand till fluffy.

  • In a third bowl mix the cheese, vanilla and 2 TBS of Bushwacker, stir with a spoon or spatula.

  • Add the cheese mixture to the whipped cream, and whisk till peaks.

  • Cut your lady fingers in half and dip in the coffee (soak 2 seconds), then place two halves at the bottom of the glass, now add 2-3 TBS of the cheese mixture, sprinkle some cacao, and repeat, 2-3 layers.

  • Cover with wrap and place in the fridge for up to 2 hours.

  • When you are ready to serve, garnish with half of a dry lady finger and sprinkle with some more cacao.
